Microwave Quick Potato Casserole

Super quick Potato Casserole made in the microwave.

Today I want to share a recipe that I have been eating since I was a little girl. We called them Mrs. Moe’s Potatoes because she was the one who taught us how to make them.

Usually potatoes take 30-45 minutes to make in the oven but this recipe is made in the microwave and it takes about 20 minutes.

The only cookware you will need is a covered 2 qt casserole dish (or larger).  Here’s a photo from one on Amazon for the one Corningware dish that I adore!  The color is my FAV!!!  No kitchen is complete without this dish!  Seriously!

TIP:  I have even made this dish with frozen hash browns to make it even easier!!!!

Since I am trying to cut back on starches I don’t usually purchase large amounts of potatoes because they tend to go bad quickly. So, instead I buy the frozen diced hash browns and then when I need a carb fix I make a batch.

INGREDIENTS 

  • 3 large potatoes
  • 1 large yellow onion
  • 4 tablespoons of butter
  • garlic salt to taste
  • cracked black pepper to taste
  • american cheese optional
  • sour cream optional

INSTRUCTIONS 

  1. Peel and chop and rinse potatoes. I prefer them cut round or diced
  2. Cut onion round less than 1/4 inch slices.
  3. Layer in a 2 Qt casserole dish.
  4. Add butter every other layer
  5. Add garlic salt and cracked black pepper to taste.
  6. Place the lid on the casserole dish and cook in microwave for 20 minutes or until the potatoes are tender.
  7. Stir about every 10 minutes to evenly distribute butter.
  8. Add american cheese or sour cream after cooking is complete. (optional)
