Finding a fun way to cool off in the summertime with a delicious keto treat is not hard.  This recipe is loved by many and super easy to make. You don’t need a lot of time or ingredients to make it either.  No need for an ice cream machine.  No need to warm any ingredients over the stove top.  I used a simple blender for this keto popsicle recipe!

Remember last year when the big hype came out at Starbucks with the famous Unicorn drink?  I am always able to find a way to make similar delicious treats that are keto friendly and tasty at the same time.  I proved that with my own Keto Unicorn Frappuccino recipe!  We still make that recipe.  YUMMY!

Well, summer is here and it’s hot!  Boy, is it hot outside?!  We came back from the pool the other day and enjoyed these keto popsicles!  My kids didn’t even miss the sugar!  They didn’t know the difference.

Here’s a tip.  You don’t need the Xanthan gum powder in the recipe if you don’t have it on hand right away.  I will tell you that it creates a nice thick and creamy type texture for your frozen popsicles though.  If you don’t have any on hand, be sure to grab some from the store the next time you go.  Either that or order some on Amazon.  I’m impressed with the texture it gives.  You will be too!  It’s worth it!  Not only that, but I use it in many other recipes when I need to thicken a gravy or so too!

On another note, be sure to use your favorite sugar substitute too.  I prefer Monk Fruit myself.  This is the brand I use too.  If it doesn’t come in a powdered form or if you don’t have a powdered form on hand, you can simply pulse it in a blender or food processor for a few minutes until it turns into a powder.  It’s super simple and easy to do.  No need to buy the powdered form if you don’t mind the extra step.

I have not tried this recipe with anything other than coconut milk.  I like the rich and creamy texture it gives these frozen desserts.  I would imagine you could try this with almond milk if you prefer too though.

  2. Pour the mixture into popsicle molds and freeze overnight.

  1. Quick question…are you using coconut milk from the can or from a carton (like Slik) in the dairy section of the grocery?

  2. I will not add fruit to my popsicles but use strawberry extract to keep the carbs even lower. I’m the only one that eats popsicles at my house and I don’t need any fruit sugar.
