I’m about to show you How to Make Keto Caramels! These make amazing treats, especially around the holidays. This recipe is not hard to follow but it is important that you prep ahead of time for it because I can almost guarantee that you will not find one of these ingredients at your local grocery store. I didn’t. I had to order it from Amazon and have it delivered. I am spoiled with my 2 day Amazon Prime delivery but I still had to wait and couldn’t just pick this ingredient up on my way home. It’s better to be prepared.
How to Make Keto Caramels
- Start by prepping a small square pan and layer it with parchment paper.
- In a medium-size frying pan over medium heat, add the butter, Monkfruit, salt, and yacon syrup.
- Continue stirring the ingredients until it starts to bubble. This will take about 3 to 4 minutes.
- Immediately whisk in the heavy cream. The mixture will bubble up a bit.
- Continue whisking the ingredients until the mixture becomes thicker. This will take another 4 to 5 minutes.
- Add the vanilla and sprinkle the Xanthan gum over the mixture while continuing to whisk it.
- Once the sauce is thick, pour it into the prepped square pan and set it on the counter until it completely cools down.
- Cut into small pieces and wrap them in wax paper. Twist the ends to seal the caramels.
