I am over the moon excited about this Keto Pull Apart Pizza Bread Recipe!  Honestly, when I attempted this recipe I wasn’t sure if I would get a big blob of dough or something spectacular.  I’m happy to report it was the latter!  Halleluja!  I decided to test a few new Keto friendly recipes before the big game.  I wanted to spice things up a bit in the kitchen with my normal keto ingredients!  Dang, I’m excited this worked!

This recipe is definitely not your typical monkey bread type recipe.  Do you know where I got this idea from?  Long before the Keto diet was ever even a thought in my head I used to make this Easy Pull Apart Pizza Bread recipe.  It was crazy viral back when Pinterest first came out.  It’s been a favorite ever since I learned about it and we definitely make it around any major sports events or parties in this house.  I just had to figure out a way to make this fit into our Keto way of eating.

Keto Pull Apart Pizza Bread Recipe Ingredients

Keto Pull Apart Pizza Bread Recipe Ingredients

  • 2 1/2 cups Mozzarella Cheese, shredded
  • 3 Eggs, beaten
  • 1 1/2 cups Almond Flour
  • 1 Tbs Baking Powder
  • 2 oz Cream Cheese
  • 1/2 cup grated Parmesan Cheese
  • 1 Tsp Rosemary seasoning
  • 1/2 cup shredded mild Cheddar (or a cheese or your choice)
  • 1/2 cup mini pepperoni slices
  • Optional:  Sliced jalapenos
  • Non-stick cooking spray
  • Non-stick Bundt Pan (I love this Bundt pan found on Amazon)

 

Keto Pull Apart Pizza Bread Recipe Instructions

  1. Combine the almond flour with the baking powder until it’s fully combined.
  2. Melt the Mozzarella cheese and cream cheese.  You can do this on the stove top or for 1 minute in the microwave.
  3. Once the cheese has melted, add the flour mixture and eggs and knead it until it forms into a sticky ball.  I always use a silicone mat on the countertop to do this step.
  4. Once the dough has come together and all the ingredients are fully mixed together, sprinkle the top of the dough with a small amount of parmesan cheese.  This will help the dough not be so sticky when you start to handle it.  I flip the dough over and sprinkle a small amount on the back side of the dough too.
  5. Form the dough into a ball and cut it in half.  Continue cutting the dough until you get about 16 pieces from each side for a total of 32 pieces total (give or take).
  6. Roll the pieces of dough into equal size balls then roll them in a plate of parmesan cheese that has been topped with a teaspoon of Rosemary seasoning.  (This is the secret to forming the pull apart bread because the parmesan cheese coats each dough ball allowing it not to fully combine while it’s baking.  Plus, it adds amazing flavor to this dough also.)
  7. Spray the bundt pan with non-stick cooking spray.
  8. Place the first layer of 16 prepared dough balls into a non-stick bundt pan.
  9. The add a layer of your favorite shredded cheese, mini pepperoni slices, and jalapenos if desired.
  10. Add the next layer of 16 prepared dough balls on top of the first layer.
  11. Top the last layer with the rest of the shredded cheese, mini pepperoni slices, and jalapenos.
  12. Bake at 350 degrees for 25 minutes or until golden brown.  It may take a bit longer if your bundt pan is thicker than the one I used.

  2. We have an 8-hour drive every year for xmas. Could I make up the dough the night before, put the ball in a cooler and form the individual balls and bake when I get there?

    1. I’ve made this dough ahead of time before. It might seem a bit tough when you remove it from the refrigerator. I would heat it in the microwave for about 10 to 30 seconds to make it soft again so you can roll out the balls of dough. This dough has lasted about 5 days in the refrigerator for me. I haven’t tested it any longer than that.

    The whole family enjoyed this pepperoni pizza ring and I stayed on plan, thanks for the recipe. I’ve had mixed success with fathead doughs in he past, bu t this one is a keeper.

  4. Do you know if this dough can be formed into balls and then frozen? It would be perfect to have a few bags of these dough balls in the freezer ready to go.

    1. I’d like to have the answer to this, as well. Has anyone tried freezing the dough? Did you leave it in one large ball, or did you divide it into smaller sizes?

    2. It was good. I modified the recipe a little. I used nacho cheese as well as a cheddar and mozza mix. Dough was a little sticky to handle but, it turned out good. I also used some marinara between the layers and with extra plus some salsa for dipping.

    Made with coconut flour by mistake! Still tastes good but a bit dry and the dough wouldn’t stay together well. I am wondering if I could add another egg and use the coconut flour without problems.

    I’ve made this several times and it is so yummy and filling. I make the balls directly from the bowl (versus taking it out and cutting it into sections). I dip my fingers in grated parmesan to help with the stickiness, then roll the ball into the parmesan/rosemary mixture. This cuts down the prep time and if the size of the balls vary a bit, it doesn’t affect the look or taste.

    So good!.

    This was amazing!! I used a 4×8 Pyrex dish as I didn’t have a bundt pan, worked great just didn’t really get multiple layers really but my husband (keto) and 15 yo son (only keto by default of eating what we eat) loved it!!

    I just made this and GOOD HOLY GOD is this delicious!! This is my first attempt at anything made with fathead dough, and I am jumping around like a little girl. If I can make yummy treats and stay LCHF, my life just got a whole lot better! (The hubby gives 2 thumbs up, too!)

    I made this last week and it was soooo delicious. It is hard to believe it is low carb.. I used shredded Italian cheese mixture (6 different kinds) and added a little Italian seasoning along with rosemary to the parmesan mixture and I just sliced the pepperoni rounds I had.

  11. I have made it twice now with varition. I didn’t have the powdered parmesan, but I just added in more almknd flour like I would do gor regular flour.
    This bread is so good! It is very easy and fast to make. My 9 year ikd nephew LOVES it!

  12. Omg! This was delicious! My toppings were a little different, but I feel like you can use whatever you want with this recipe (I put spinach instead of jalapeños , and a little pre cooked ground beef with a tiny bit of low carb marinara). Even my kid ate it! Thank you

    This recipe was so good! I used bacon instead of pepperoni and sprinkled the parmesan mixture for the dough balls with a little almond flour to help them keep from sticking. Delicious!

    If you are like me and read a bunch of comments before deciding to try a recipe, make this as soon as possible. SO GOOD!

    I tried this tonight. I used fresh grated parmesan cheese, and it didn’t work well. I should have realized from the posted pictures that this was made with parm you buy already grated (like Kraft brand). The problem with grating your own is that the pieces are bigger and it doesn’t coat the dough balls completely. . . Totally losing the idea of pull apart bread! Flavor was great. Dough was easy to work with. And instructions were easy to follow and complete. Thanks for all the great recipes!
