You are going to fall in love with this delicious Keto Shepherd’s Pie Casserole Recipe!  I promise you that this Keto comfort food will win over your heart!  It’s baked in a cast iron skillet and makes a wonderful meal for the whole family!  There’s something very special about cooking your favorite foods in a cast iron skillet like grandma used to do but these recipes are guilt-free with very low carbs to help you stay on track with your Keto diet!

The cooler weather is soon to approach and I will be ready with some of our Keto comfort food favorites like this casserole recipe.  And, it has bacon!!

Here’s a recipe time saving tip for you.  You can purchase frozen cauliflower and heat it up in the microwave to save some time and a few steps with this recipe too.

This beef is seasoned with tons of flavor!  The whole family will love this recipe.  You might find it hard to believe that this recipe is Keto friendly.  Yes, it’s that good.

Keto Shepherd's Pie Casserole Recipe

Keto Shepherd’s Pie Casserole Recipe Ingredients

  • 6 slices of bacon, chopped and cooked
  • 1 1/2 pounds of lean ground beef
  • 1/2 medium green pepper, diced
  • 1/2 medium red pepper, diced
  • 1 tablespoon of chili powder
  • 1 teaspoon of cumin
  • 1 teaspoon of oregano
  • 1 teaspoon of onion powder
  • salt and pepper to taste
  • 2oz can of sliced black olives
  • 3 large eggs, whisked
  • 2 cups of shredded cheddar cheese

Cauliflower mixture:

  • 1 head of cauliflower, cut into florets
  • 3 tablespoons of butter
  • 1/4 cup of heavy whipping cream
  • salt and pepper to taste

Keto Shepherd’s Pie Casserole Recipe Instructions

  1. Preheat oven to 375 degrees Fahrenheit.
  2. In a large cast iron pan, add in peppers and ground beef. Cook until beef has been browned.
  3. Add in seasonings, black olives, and bacon. Set to the side.
  4. Boil cauliflower until tender. Drain cauliflower and mash cauliflower. Add in butter, salt, pepper, and slowly add in heavy whipping cream. Continue mashing and mixing until it is smoother and creamy. (Depending on the size of your cauliflower, you may need to add less whipping cream.)
  5. Add eggs to your meat mixture and top with cauliflower mash. Add an even layer of cheese to coat the mash.
  6. Bake in your oven for 20-25 minutes, or until cheese is melted and bubbly.
  7. Optional, garnish with cilantro, black olives, and bacon.

You can make this ahead of time and freeze it if needed. Store it in a freezer safe casserole dish.
