This Low Carb Creamy Tuscan Chicken recipe has quickly turned into a family favorite.  This might just be one of the easiest recipes we ever made, aside from recipes made in our Instant Pot Pressure cooker.  Remember that Pressure cooker Lobster Tails recipe we made the other day?  Oh, my word, it was delicious!  I am a huge fan of quick and easy meals even though I love to cook and bake.

Low Carb Creamy Tuscan Chicken Recipe Ingredients

  • 2 tablespoons olive oil
  • 2 chicken breasts (can be split to 4)
  • 3 tablespoons lemon pepper seasoning
  • 5 tablespoons garlic, minced
  • ½ onion, diced
  • ½ cup chicken broth
  • 1 cup heavy cream
  • ½ cup parmesan
  • 3 cups baby spinach
  • 5 oz. jar julienne sun-dried tomatoes
  • 1 teaspoon garlic powder
  • 1 teaspoon italian seasoning

 

Low Carb Creamy Tuscan Chicken Recipe Instructions

  1. Season the chicken with lemon pepper seasoning.
  2. In a large skillet drizzle olive oil, place the seasoned chicken breasts and cooking until cooked all the way through.
  3. Once chicken breasts have cooked, remove and set aside.
  4. Add in onions and saute until translucent, stirring in garlic.
  5. Deglaze the pan with chicken broth, getting all the brown bits that may have stuck to the bottom of the pan.
  6. Add in heavy cream and stir until incorporated.
  7. Stir in parmesan until melted and incorporated.
  8. Mix in garlic powder and Italian seasoning.
  9. Place spinach and sun-dried tomatoes into the mixture and allow the spinach to wilt and the sun-dried tomatoes to heat through, about 3-5 minutes on medium-low heat.

Serve with your favorite veggies for a complete meal.  I might suggest a cauliflower mash or cauliflower rice!  Those are also family favorites.
