Quick Jalapeno Corn Dip Recipe

Ingredients
  

  • 2 cans MexiCorn or one bag of frozen corn. I usually have frozen corn on hand so that's what I use. If you use frozen corn, make sure to thaw it out completely and do not cook it.
  • 8 oz sour cream
  • 1 cup real mayonnaise
  • 1 1/2 cups shredded cheddar cheese
  • 4 green onions chopped - optional
  • 3 seeded jalapenos chopped - for a spicier version you can use 5 jalapenos and only take the seeds out of 3

Instructions
 

  • Pour corn into a medium/ large bowl. If using frozen corn, be sure it is completely thawed.
  • Seed and chop jalapenos, add to corn and mix.
  • Add sour cream, mayo, cheddar cheese and mix well.
  • Serve with Fritos or your favorite tortilla chips. If you make this dip ahead of time, just cover the bowl and keep in the fridge until you are ready.
