  • 6 slices of bacon chopped and cooked
  • 1 1/2 pounds of lean ground beef
  • 1/2 medium green pepper diced
  • 1/2 medium red pepper diced
  • 1 tablespoon of chili powder
  • 1 teaspoon of cumin
  • 1 teaspoon of oregano
  • 1 teaspoon of onion powder
  • salt and pepper to taste
  • 2 oz can of sliced black olives
  • 3 large eggs whisked
  • 2 cups of shredded cheddar cheese
  • Cauliflower mixture:
  • 1 head of cauliflower cut into florets
  • 3 tablespoons of butter
  • 1/4 cup of heavy whipping cream
  • salt and pepper to taste


  • Preheat oven to 375 degrees Fahrenheit.
  • In a large cast iron pan, add in peppers and ground beef. Cook until beef has been browned.
  • Add in seasonings, black olives, and bacon. Set to the side.
  • Boil cauliflower until tender. Drain cauliflower and mash cauliflower. Add in butter, salt, pepper, and slowly add in heavy whipping cream. Continue mashing and mixing until it is smoother and creamy. (Depending on the size of your cauliflower, you may need to add less whipping cream.)
  • Add eggs to your meat mixture and top with cauliflower mash. Add an even layer of cheese to coat the mash.
  • Bake in your oven for 20-25 minutes, or until cheese is melted and bubbly.
  • Optional, garnish with cilantro, black olives, and bacon.


You can make this ahead of time and freeze it if needed. Store it in a freezer safe casserole dish.
