Delicious Acorn Squash Recipe

Ingredients
  

  • 2 acorn squash
  • 1 pound Italian sausage
  • 1 cup of apples cubed I used fuji but you can use whatever you like
  • 1/2 cup of parmesan cheese
  • 1/2 cup bread crumbs
  • 1 stalk celery chopped fine
  • olive oil
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 350. Cut Acorn squash in half. you may have to cut the ends off also so they lay flat on a baking sheet. Scoop out the seeds inside of the squash. Brush the inside of the squash with olive oil and sprinkle with a little salt and pepper over them. Bake for 30 minutes.
  • In a large frying pan fry sausage over a medium heat until no longer pink. Add in celery and apples. I love the taste of Fuji apples and this is what I used but you can use any flavor apple you like. Now continue to cook this mixture for another five minutes for so to soften the apples and celery and combine all the flavors into all the ingredients. Add bread crumbs and cheese. mix all together well. Scoop mixture into each acorn squash. Bake for 30 minutes.
