How to Make Keto Caramels

  • Start by prepping a small square pan and layer it with parchment paper.
  • In a medium-size frying pan over medium heat, add the butter, Monkfruit, salt, and yacon syrup.
  • Continue stirring the ingredients until it starts to bubble.  This will take about 3 to 4 minutes.
  • Immediately whisk in the heavy cream.  The mixture will bubble up a bit.
  • Continue whisking the ingredients until the mixture becomes thicker.  This will take another 4 to 5 minutes.
  • Add the vanilla and sprinkle the Xanthan gum over the mixture while continuing to whisk it.
  • Once the sauce is thick, pour it into the prepped square pan and set it on the counter until it completely cools down.
  • Cut into small pieces and wrap them in wax paper.  Twist the ends to seal the caramels.
  • Enjoy!

Notes

This recipe uses Yacon syrup to give the caramels a rich and chewy type texture.
