Add the oil to the pressure cooker and press the saute button.
When the pressure cooker has heated, add the onions, dried basil seasoning, and carrots. You will saute these until the onions become translucent. This will take about 5 minutes.
Turn off the saute setting on the pressure cooker.
Now add the 3 large cans of tomatoes, 1 large container of low-sodium chicken broth along with the salt and pepper seasonings.
Lock the pressure cooker lid and set the vent to seal.
Now press the soup function button and set the timer for 40 minutes.
Always do a natural release of the steam when you are making soup. Allow it to sit for about 15 minutes until all the pressure has released.
Remove the lid. Be careful because the ingredients will be extremely hot!
Next, I use my Cuisinart hand blender to blend the tomatoes until the soup is nice and smooth. This process takes less than 3 minutes! I love my hand blender! It's easy to store and always comes in handy.
Finally, add 2 cups of heavy whipping cream to the soup mixture. Give it a final stir to combine the cream and serve warm!
You can add fresh basil strings, croutons, sour cream or even finely shredded cheese to the top of this soup too. It's absolutely delicious! This is my go-to recipe when I want some comfort soup!
We are a family of four and I can usually have this batch last between 2 to 3 meals if I serve it with a side sandwich. It may only end up being two dinners for my family if I just serve the soup alone.
