Nordstrom Tomato Basil Soup Made in a Pressure Cooker!

Ingredients
  

  • 1/3 cup extra-virgin olive oil
  • 5 carrots peeled and chopped
  • 1 large yellow onion chopped
  • 1 tablespoon dried basil
  • 3 cans 28 ounces each whole Italian-style tomatoes
  • 1 can 14 1/2 ounces low-sodium chicken broth
  • 2 cups heavy whipping cream
  • Kosher salt
  • Freshly ground black pepper
  • Optional: Serve this soup with 2 tablespoons lightly packed fresh basil leaves cut into fine ribbons

  • Dice the onions and carrots first.Add the oil to the pressure cooker and press the
  • Add the oil to the pressure cooker and press the saute button.
  • When the pressure cooker has heated, add the onions, dried basil seasoning, and carrots. You will saute these until the onions become translucent. This will take about 5 minutes.
  • Turn off the saute setting on the pressure cooker.
  • Now add the 3 large cans of tomatoes, 1 large container of low-sodium chicken broth along with the salt and pepper seasonings.
  • Lock the pressure cooker lid and set the vent to seal.
  • Now press the soup function button and set the timer for 40 minutes.
  • Always do a natural release of the steam when you are making soup. Allow it to sit for about 15 minutes until all the pressure has released.
  • Remove the lid. Be careful because the ingredients will be extremely hot!
  • Next, I use my Cuisinart hand blender to blend the tomatoes until the soup is nice and smooth. This process takes less than 3 minutes! I love my hand blender! It's easy to store and always comes in handy.
  • Finally, add 2 cups of heavy whipping cream to the soup mixture. Give it a final stir to combine the cream and serve warm!
  • You can add fresh basil strings, croutons, sour cream or even finely shredded cheese to the top of this soup too. It's absolutely delicious! This is my go-to recipe when I want some comfort soup!
  • We are a family of four and I can usually have this batch last between 2 to 3 meals if I serve it with a side sandwich. It may only end up being two dinners for my family if I just serve the soup alone.
