I’m so excited about this Nordstrom Tomato Basil Soup Made in a Pressure Cooker!  This recipe is amazing!  It’s even better the next day.  I love that this recipe makes a huge batch of soup too because I can freeze some for later or feed a huge family too!

Tip:  Store soup in a lemonade pitcher in the fridge.  Not only will it help save space in the refrigerator, it’s easy to pour when you want to serve some up too!

One of my daughter’s favorite meals is tomato soup.  She prefers I make it with a grilled cheese sandwich.  Not your normal grilled cheese sandwich either.  I’m talkin’ the huge grilled cheese sandwich with meat in the middle!   We also make a killer grilled cheese that has a special secret ingredient sprinkled on the crust when we grill it.  Can you guess what it is?  This idea was inspired by the Tom+Chee restaurant chain and we make this grilled cheese sandwich often!  Here are the recipes for these grilled cheese sandwich combinations:

Nordstrom Tomato Basil Soup Made in a Pressure Cooker

Nordstrom Tomato Basil Soup Ingredients

1/3 cup extra-virgin olive oil
5 carrots, peeled and chopped
1 large yellow onion, chopped
1 tablespoon dried basil
3 cans (28 ounces each) whole Italian-style tomatoes
1 can (14 1/2 ounces) low-sodium chicken broth
2 cups heavy (whipping) cream
Kosher salt
Freshly ground black pepper
Optional:  2 tablespoons lightly packed fresh basil leaves, cut into fine ribbons

Add the oil to the pressure cooker and press the saute button.

When the pressure cooker has heated, add the onions, dried basil seasoning, and carrots.  You will saute these until the onions become translucent.  This will take about 5 minutes.

Turn off the saute setting on the pressure cooker.

Now add the 3 large cans of tomatoes, 1 large container of low-sodium chicken broth along with the salt and pepper seasonings.

Lock the pressure cooker lid and set the vent to seal.

Now press the soup function button and set the timer for 40 minutes.

Always do a natural release of the steam when you are making soup.  Allow it to sit for about 15 minutes until all the pressure has released.

Remove the lid.  Be careful because the ingredients will be extremely hot!

Next, I use my Cuisinart hand blender to blend the tomatoes until the soup is nice and smooth.  This process takes less than 3 minutes!  I love my hand blender!  It’s easy to store and always comes in handy.

Finally, add 2 cups of heavy whipping cream to the soup mixture.  Give it a final stir to combine the cream and serve warm!

You can add fresh basil strings, croutons, sour cream or even finely shredded cheese to the top of this soup too.  It’s absolutely delicious!  This is my go-to recipe when I want some comfort soup!

We are a family of four and I can usually have this batch last between 2 to 3 meals if I serve it with a side sandwich.  It may only end up being two dinners for my family if I just serve the soup alone.
