Strawberry Walnut Spinach Salad

Ingredients
  

DRESSING

  • 3/4 cup olive oil
  • 1/2 pound strawberries
  • 2 tablespoons balsamic vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon tarragon
  • 1/4 teaspoon keto granulated sweetener or granulated sugar (for non-keto)

SALAD

  • baby spinach fresh
  • strawberries chopped
  • Parmesan cheese shaved
  • walnuts

Instructions
 

  • Add all dressing ingredients to food processor or blender and blend until smooth.
  • Toast walnuts over low heat until slightly brown.
  • Place Spinach on plates.
  • Top with strawberries and walnuts.
  • Add shaved parmesan cheese on top.
  • Serve with dressing.
