Easy Lasagna Roll Ups Recipe

Ingredients
  

  • 1 box of Barilla® Lasagne noodles
  • 1 jar of Barilla® Sauce
  • 5 cups kale chopped
  • 2 cloves garlic chopped
  • 1 tsp olive oil
  • 15 oz ricotta cheese
  • 1 cup small curd cottage cheese
  • 2 eggs whisked
  • 2 tablespoons parsley flakes
  • salt and pepper
  • 1 cup mozzarella cheese shredded

Instructions
 

  • Cook the noodles first.
  • Lay them out on wax paper to cool.
  • While your noodles are cooling, start sauteing your chopped kale with garlic in olive oil.
  • Let the sauteed kale cool down
  • In a separate bowl, combine the ricotta cheese, cottage cheese, eggs, parsley, salt and pepper.
  • Spread this mixture onto each lasagne noodle
  • Roll up
  • Place the rolled up lasagna in a deep casserole dish with the opening of the roll at the bottom (this will prevent it from unrolling)
  • Top with the sauce and mozzarella cheese
  • Top the casserole dish with foil and bake it for about 40 minutes (or until the cheese in the middle is melted)
