Oven Baked Chicken Recipe

Here's a super simple oven baked chicken recipe to add to your collection!

Ingredients
  

  • 6 – 8 chicken thighs or breasts
  • 1 t kosher salt 1 t black pepper
  • 2 t dried oregano
  • 4 cloves garlic
  • Juice of 2 lemons
  • 2 T olive oil
  • Side Dish: 1 package whole wheat orzo
  • 4 oz Greek olives pitted
  • 2 to matoes seeded and chopped
  • 2 c spinach
  • 1/2 c feta
  • 3 T olive oil
  • Salt and pepper to taste

Instructions
 

  • Combine chicken with salt, pepper, oregano, garlic, lemon juice and olive oil.
  • Marinate for 2 – 6 hours.
  • Grill over medium to high heat for 20 minutes or bake for 20 minutes at 350 degrees.
  • Side Dish: Cook orzo according to package directions.
  • Combine with olives, tomatoes, spinach, feta, olive oil, salt and pepper. Refrigerate for 2 – 8 hours.
