Easy Cranberry Pear Cobbler

Ingredients

  • 1 1/2 cups fresh cranberries
  • 1 large ripe pear peeled and diced
  • 1 cup sugar + 2 tablespoons
  • 1/4 cup water
  • 1 cup flour
  • 1 cup milk
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla
  • 1 stick butter

Instructions

  • Simmer cranberries, 2 tablespoons sugar and water in a saucepan until it boils, stirring often. (I break the cranberries apart as they cook so they get sweetened through). Add diced pear and remove from heat and let cool.
  • Melt stick of butter in the bottom of your baking dish ( I microwave right in the dish for 1 minute)
  • Mix 1 cup sugar, milk, flour, baking powder, and vanilla in a mixing bowl.
  • Pour batter mixture right on top of the butter- do not mix.
  • Pour cranberry mixture over the batter, distributing evenly- do not mix.
  • Bake at 350 degrees for 45 minutes or until top is browned.
