Gluten Free Peanut Butter Cookies

Ingredients

  • 1 cup of peanut butter we used Skippy
  • 8 oz. of cream cheese softened
  • 1/2 cup of honey
  • 1 tsp vanilla extract
  • 1/4 tsp sea salt
  • 1/2 tsp baking soda
  • 1 egg

Instructions

  • Preheat your oven to 350
  • Mix all of the ingredients together in a large bowl. The recipe said the dough may be runny, but mine was a "whipped" consistency
  • Drop cookies (just under a tablespoon size) onto a baking sheet lined with parchment paper, placing them about 2 inches apart
  • Bake for 12 to 13 minutes or until golden brown
  • Allow cookies to cool completely or serve slightly warm

Notes

Store any extra cookies in an airtight container in the fridge.
