I used about 2 pounds of Chicken breastsfeel free to use any part of the chicken you wish to use for this recipe
2Tablespoonsof Olive Oil
3Tablespoonsof chopped or minced garlic
Fresh squeezed limesI used 3 small limes
1/2teaspoonsaltI prefer to use Kosher salt but feel free to use what you have
1/4teaspoonblack pepper
1/2teaspoonMonk Fruit Sweetenerthis can be an optional ingredient but it does offset the salt nicely
1bunch of Cilantrothis was approximately 3/4 cup when chopped
Instructions
Place the chicken in two separate large zip lock bags.
Use the food processor to chop all the cilantro first. Then add all the remaining ingredients and mix it in the food processor until it's all well blended. Be sure not to get the seeds from the limes in the mixture.
Let this marinade for at least 1 hour or more before grilling.
