Prep the zucchini into zoodles by using a spiralizer and set them aside.
In a large skillet, start by melting the butter first.
Next, add the olive oil, fresh garlic. vegetable broth, salt, and pepper. Simmer until all the ingredients become hot. About 2 to 3 minutes or so.
Add the raw shrimp until they turn pink.
Remove the cooked shrimp and sauce and set aside.
Add a tablespoon of oil to the skillet that is still hot and add the zoodles.
Cook the zoodles in the hot oil for about 3 to 5 minutes, just enough for them to be soft.
Now add the shrimp scampi back into the hot skillet and cook for another minute or so to make sure all the ingredients are warm.
Sprinkle with the lemon juice just before serving it.
Serve warm and enjoy!
