Keto Skillet Shrimp Scampi and Zoodles Ingredients

  • 3 Medium Size Zucchinis (I usually use about a 1/2 per serving so 1 zucchini will feed 2 people)
  • 2 pounds large shrimp, shelled
  • 2 tbs butter
  • 2 tbs olive oil
  • 2 tsp fresh garlic, minced
  • 1/2 cup vegetable broth
  • salt and pepper to taste
  • 1 tbs lemon juice
  • Optional:  add cherry tomatoes

Keto Skillet Shrimp Scampi and Zoodles Instructions

  1.  Prep the zucchini into zoodles by using a spiralizer and set them aside.
  2. In a large skillet, start by melting the butter first.
  3. Next, add the olive oil, fresh garlic. vegetable broth, salt, and pepper.  Simmer until all the ingredients become hot.  About 2 to 3 minutes or so.
  4.  Add the raw shrimp until they turn pink.
  5. Remove the cooked shrimp and sauce and set aside.
  6. Add a tablespoon of oil to the skillet that is still hot and add the zoodles.
  7. Cook the zoodles in the hot oil for about 3 to 5 minutes, just enough for them to be soft.
  8. Now add the shrimp scampi back into the hot skillet and cook for another minute or so to make sure all the ingredients are warm.
  9. Sprinkle the ingredients with the lemon juice just before serving it.
  10. Serve warm and enjoy!

Ingredients

I find them in the cool section of my vegetable department where all the pre-prepped food is.

Are Zoodles Keto Friendly?

Yes, they are!  Just be sure to what your macros to make sure you are eating within your personal limits.

How to Cook Zoodles on the Stove?

Yes,  there are two ways to cook them on the stove top.  You can either cook them in water or you can fry them in oil or butter.

How do Zoodles Taste?

Zoodles are a nice way to replace noodles while still having a similar texture.  Honestly, I feel the zoodles take on most of the flavor of the sauce you add to it.

How to Make Zoodles Without a Spiralizer?

You can make Zoodles without a spiralizer but it will be a bit time-consuming.  You will need to use a vegetable peeler to cut very thin slices of the zucchini.  Then, go back and cut square strips from each flat slice of zucchini you sliced this the vegetable peeler to make your zoodles.  You can get some fairly inexpensive spiralizers on Amazon and it would be worth the investment if you have a love for Zoodles like I do!

How to Make Zoodles Less Watery?

If you don’t want watery zoodles, don’t cook them in water.  First, slice the zoodles using a spiralizer and then lay them out flat on some paper towels.  Sprinkle them lightly with salt and then and cover them with paper towels.   Wait about 5 or 10 minutes.  You will notice the salt will draw out the moisture from the zucchini.  Then be sure to fry it with oil but only for about 3 to 5 minutes until they become soft.

How to Make Zoodles Less Crunchy?

If you prefer less crunchy type Zoodles, I highly recommend you steam them in water.  You can cook them to the desired consistency in water with no fuss at all.  Just be sure to strain them before adding sauce to them.
