Easter Cupcake Recipes:  Spring Chicks Easter Cupcakes

If you are looking for some Easter Cupcake recipes I have one for ya!  How adorable are these Spring Chicks Easter Cupcakes?!!  I just love fun Easter recipes!!!  These cupcakes are super easy to make.  Let the kiddos get involved in this one!  This one is always a bit hit around our Easter Celebrations!

Here’s what you need to make these cupcakes:

1 Box Cupcake mix
1 bag shredded coconut
Yellow food color
Green food color
1 container vanilla frosting
1 bag of chocolate chips
24 small orange gumdrops (you can use candy corn too)

Cupcake directions:
Bake the cupcakes according to the directions on the box. Cool.

While the cupcakes are baking take place 3/4 bag of the shredded coconut in a zip lock baggie and add about 8 drops of yellow food coloring to it. Shake it well until all the shredded coconut has turned yellow. Add a few more drops of food coloring if needed.

Take the remainder 1/4 shredded coconut and add it to a zip lock but this time use the green food coloring. You should only need about 4 or 5 drops this time. This will be used as decoration on the plate to look like grass.

Once the cupcakes are cool. Frost them with the vanilla icing and sprinkle the yellow shredded coconut on top of the cupcakes. Next add two chocolate chips for the eyes. Then cut out small triangles our of the orange gumdrops to make the chicks nose.

Lay them out on your decorative platter and add the remainder of the green coconut around the bottom of the plate.

Voila! That’s it! Wasn’t that super easy and fun! My kids love this project!
