Keto Skillet Shrimp Scampi and Zoodles

Ingredients

  • 3 Medium Size Zucchinis I usually use about a 1/2 per serving so 1 zucchini will feed 2 people
  • 2 pounds large shrimp shelled
  • 2 tbs butter
  • 2 tbs olive oil
  • 2 tsp  fresh garlic minced
  • 1/2 cup vegetable broth
  • salt and pepper to taste
  • 1 tbs lemon juice

Instructions

  • Prep the zucchini into zoodles by using a spiralizer and set them aside.
  • In a large skillet, start by melting the butter first.
  • Next, add the olive oil, fresh garlic. vegetable broth, salt, and pepper.  Simmer until all the ingredients become hot.  About 2 to 3 minutes or so.
  • Add the raw shrimp until they turn pink.
  • Remove the cooked shrimp and sauce and set aside.
  • Add a tablespoon of oil to the skillet that is still hot and add the zoodles.
  • Cook the zoodles in the hot oil for about 3 to 5 minutes, just enough for them to be soft.
  • Now add the shrimp scampi back into the hot skillet and cook for another minute or so to make sure all the ingredients are warm.
  • Sprinkle with the lemon juice just before serving it.
  • Serve warm and enjoy!
