Southern Pineapple Casserole Recipe

Ingredients

  • 2 – 20 oz cans of crushed pineapple drained but reserve the juice
  • 1/4 cup pineapple juice that was reserved
  • 2 cups mild or sharp cheddar cheese shredded
  • 1/2 cup white sugar
  • 1/3 cup all purpose flour
  • about 40 buttery crackers crushed
  • 1/2 cup butter melted

Instructions

  • First, gather all the ingredients.
  • Shred your cheese.
  • Drain both cans of crushed pineapple. Reserve about 1/4 cup of juice to use in the recipe.
  • In a medium size bowl, combine the shredded cheese, crushed pineapple, sugar, flour and the 1/4 cup of reserved pineapple juice. Mix until well combined.
  • Pour the mixed ingredients into a casserole dish that’s about 8 inch square pan or a 10 inch rectangle baking dish. About 1.5 quarts baking dish or as close to it as possible.
  • Melt the butter. This will be one full stick or 1/2 cup. It takes about 30 seconds in the microwave to melt the butter fully.
  • Crush the crackers to your desired consistency.
  • Mix the butter into the crush crackers and top it on your cheese pineapple mixture in the baking dish.
  • Bake this for about 30 minutes (or until golden brown) uncovered in the previously preheated oven.
