Best Carrot Cake Recipe

Ingredients

  • 6 egg whites
  • 1 1/3 cups of white sugar
  • 1 cup of applesauce
  • 1/2 cup of skim milk
  • 1 1/2 teaspoons vanilla extract
  • 1/4 teaspoon of ground cloves
  • 1/2 teaspoon of ground nutmeg
  • 1 tablespoon of ground cinnamon
  • 2 teaspoons of baking soda
  • 1 cup of whole wheat flour
  • 1 cup all purpose flour
  • 1 8 ounce can of crushed pineapple with juice
  • 2 cups of shredded carrots
  • 1/2 cup of chopped walnuts
  • 1/2 cup of raisins

Instructions

  • On your oven, set to preheat at 350 degrees F. Now lightly grease a 9x13 inch pan with a non-fat cooking spray.
  • Take a large mixing bowl, and beat the egg whitesNow you can slowly beat in the sugar, then the applesauce, skim milk, and vanilla. Stir in your cloves, nutmeg, cinnamon, baking soda, and flour. Now, stir in one at a time, your pineapple (with it's juice), carrots, walnuts, and raisins. You can now pour this mixture into the pan you had prepared earlier.
  • Bake this for about 35-40 minutes in the oven you had preheated. You know it is done when you can insert a toothpick, and the center comes out clean.
