Easter Egg Bird Nest Cookie Cups Recipe

Ingredients

  • 1/2 cup butter softened
  • 1/2 cup + 2 Tablespoons granulated sugar
  • 1 tablespoons vanilla extract
  • 1 egg
  • 1 1/4 cups all purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup sweetened coconut flakes
  • Green food coloring
  • Malted milk eggs
  • Icing Ingredients:
  • 1 1/2 cups powdered sugar
  • 6 tablespoons softened butter
  • 1 teaspoon vanilla extract
  • 1 tablespoons milk

Instructions

  • Preheat your oven to 350 degrees and grease a cupcake pan with butter or a non stick cooking spray.
  • In a large mixing bowl, mix your butter and sugar until light and fluffy.
  • Mix in vanilla extract and egg.
  • Then mix in your flour, baking powder, baking soda, and salt.
  • Form your dough into small 1" balls and press into each cupcake mold.
  • Bake for 10-12 minutes.
  • Carefully press the centers down with a spoon and let cool.
  • Mix 1 cup of coconut with a drop of green food coloring.
  • Fill each cookie cup with icing and top off with a sprinkle of green coconut a 2-3 malted milk eggs.
  • Icing instructions
  • Cream your butter until light and fluffy with a hand or stand mixer.
  • Slowly mix in your powdered sugar, vanilla, and milk a little at a time.
  • Scoop into a sandwich bag and cut a corner off the bag.
