Keto Maple Pumpkin Bake Recipe

Ingredients

  • 1 small pumpkin aprox 10 slices
  • 1/4 cup butter
  • 2 tbs sugar free maple syrup
  • dash of maple extract Optional
  • 1/4 tsp cinnamon
  • 1/8 cup walnuts chopped
  • Sprinkle some sea salt
  • pecans to decorate optional

Instructions

  • Chop a small pumpkin into 1-inch cubes with the rind removed (I used a white pumpkin as we don’t have orange ones yet)
  • Add pumpkin to a casserole dish
  • In a microwave safe bowl add 1/4 cup butter with 2 Tbs sugar-free syrup and add a dash of maple extract (Optional) 1/4 tsp allspice and a dash of cinnamon. Microwave for 30 seconds or until melted.
  • Next, add 1/8 cup of chopped walnuts to butter mixture, stir and pour over pumpkin mix/toss together till all is coated. Sprinkle a little sea salt on top and place pecans (Optional)
  • Now bake it at 400 for 45 mins or until tender.
