Keto Maple Pumpkin Bake Recipe Ingredients

  • 1 small pumpkin (approx 10 slices)
  • 1/4 cup butter
  • 2tbs sugar-free maple syrup
  • dash of maple extract (Optional)
  • 1/4 tsp cinnamon
  • 1/8 cup chopped walnuts
  • Sprinkle some sea salt
  • pecans to decorate (optional)

Keto Maple Pumpkin Bake Recipe Instructions:

  1. Chop a small pumpkin into 1-inch cubes with the rind removed. (I used a white pumpkin as we don’t have orange ones yet.)
  2. Add pumpkin to a casserole dish.
  3. In a microwave safe bowl add 1/4 cup butter with 2 Tbs sugar-free syrup and add a dash of maple extract (Optional) 1/4 tsp allspice and a dash of cinnamon. Microwave for 30 seconds or until melted.
  4. Next, add 1/8 cup of chopped walnuts to butter mixture, stir and pour over pumpkin mix/toss together till all is coated. Sprinkle a little sea salt on top and place pecans. (Optional)
  5. Now bake it at 400 for 45 mins or until tender.

This makes a great side dish other than sweet potatoes!
