2cans MexiCorn or one bag of frozen corn. I usually have frozen corn on handso that's what I use. If you use frozen corn, make sure to thaw it out completely and do not cook it.
8ozsour cream
1cupreal mayonnaise
1 1/2cupsshredded cheddar cheese
4green onionschopped - optional
3seeded jalapenoschopped - for a spicier version you can use 5 jalapenos and only take the seeds out of 3
Instructions
Pour corn into a medium/ large bowl. If using frozen corn, be sure it is completely thawed.
Seed and chop jalapenos, add to corn and mix.
Add sour cream, mayo, cheddar cheese and mix well.
Serve with Fritos or your favorite tortilla chips. If you make this dip ahead of time, just cover the bowl and keep in the fridge until you are ready.
