If you need a super simple party dish that people will devour, then this Quick Jalapeno Corn Dip Recipe is the recipe for you! My mom makes this a lot and is the one who introduced me to it. She swears by it and never comes home with any leftovers. It truly is a quick and easy dish that can be thrown together and ready to enjoy in no time. Serve this Quick Jalapeno Corn Dip Recipe with your favorite corn chips and maybe some sliced or diced jalapenos on the side for those who want a little extra kick! The jalapenos in this recipe are seeded and chopped up. To make this a little easier and to chop them up fine, I throw them into my Ninja. It’s done it seconds. If you prefer it chunkier, then just chop them by hand. Also, if you like foods a little spicier, you can add extra jalapenos or leave a few of the seeds in.

Quick Jalapeno Corn Dip Recipe Ingredients:

  • 2 cans MexiCorn or one bag of frozen corn. I usually have frozen corn on hand, so that’s what I use. If you use frozen corn, make sure to thaw it out completely and do not cook it.
  • 8 oz sour cream
  • 1 cup real mayonnaise
  • 1 1/2 cups shredded cheddar cheese
  • 4 green onions, chopped – optional
  • 3 seeded jalapenos, chopped – for a spicier version you can use 5 jalapenos and only take the seeds out of 3

Quick Jalapeno Corn Dip Recipe Instructions:

  1. Pour corn into a medium/ large bowl. If using frozen corn, be sure it is completely thawed.
  2. Seed and chop jalapenos, add to corn and mix.
  3. Add sour cream, mayo, cheddar cheese and mix well.
  4. Serve with Fritos or your favorite tortilla chips. If you make this dip ahead of time, just cover the bowl and keep in the fridge until you are ready.
