Caramelized Apple and Onion Grits Crostini

Ingredients

  • 2 teaspoons oil
  • 1 medium onion, thinly sliced
  • 2 small apples, cored and sliced
  • 1/4 cup uncooked grits
  • 1 1/4 cups water
  • 1/2 cup flour
  • 2 teaspoons sugar
  • 1/8 teaspoon salt
  • 1/2 cup milk
  • 2 tablespoons butter, melted
  • 1 egg
  • 4 ounces smoked gouda, shredded
  • minced thyme for garnish

Instructions

  1. In a skillet over medium high heat add the oil and onion, sauté until the onion is soft and beginning to brown, 5-8 minutes.
  2. Add in the apple slices and reduce to medium heat. Toss frequently until the onions are caramelized and the apples are slightly caramelized, 8-10 minutes. Remove from heat and set aside.
  3. In a small sauce pan bring the water to a boil, slowly stir in the Grits reduce heat to a simmer and stir occasionally until thick, 5-8 minutes. Set aside and let cool.
  4. Preheat oven to 400 degrees.
  5. In a bowl combine the flour, sugar and salt. Make a well in the middle and add the milk, butter and egg. Whisk to combine. Whisk in the cooled grits breaking up any lumps.
  6. Spray two 12 cup muffin tins with cooking spray. Add 1 tablespoon of batter to each cup. Bake at 400 degrees until brown and crispy on the edges, 13-15 minutes. Remove to wire rack to cool. Reduce oven to 350 degrees.
  7. Place crostinis on a baking sheet, place a small amount of cheese on top of each, followed by a small amount of onion, apple slice and just a little bit more cheese.
  8. Bake at 350 degrees until the cheese starts to brown, about 8 minutes.
