Storing homemade popsicles in the freezer is simple. To avoid popsicles sticking to each other, put some parchment paper between each layer of your homemade popsicle molds. This might not work if you have square or rectangular-shaped ice cube trays as I do, but it works well with my round ones too!

Not that they will last long because they taste delicious, but you can store this homemade popsicle recipe in the freezer for up to three months.

This blueberry lemonade popsicle recipe makes six servings or two popsicles per person. If you want more than that, just multiply the ingredients for each one by how many popsicles you would like to have leftover.

Low Carb Blueberry Lemonade Popsicles Recipe Instructions

  1. Place one tablespoon of blueberry (for the pink color), the juice of one orange, the juice of two lemons, 1/4 cup of granulated sweetener and three mint leaves in a blender.
  2. Blend until combined. Adjust sweetness if desired. A quick tip: at this point, it might be very sweet or sour, but when chilled, flavors tend to be less intense.
  3. Place some blueberries in each popsicle mold and then pour the lemonade. Remember to place the popsicle sticks too!
  4. Place them in the freezer for at least 6 hours or until completely hardened.
  5. Enjoy!

 

Tips

  • Replace blueberries with other kinds of berries, or all of them at the same time!
  • For low-carb popsicles, use granulated monk fruit 1:1 ratio with sugar.
  • These popsicles last all summer long. Make a few batches and have them ready to eat.

These popsicles are sweet and sour, just like lemonade. Very refreshing and easy to make. I like to have whole blueberries on the inside because it provides a nice bite, but blending them all would be cool. It won’t be pink, that’s all! You could also replace lemon with lime and add some fresh ginger; it matches nicely with citrus and mint.
