Ingredients
  

  • 2 tablespoons tahini
  • 2 tablespoons olive oil or soybean oil often labeled "vegetable oil"
  • 3 tablespoons lemon juice
  • 2 tablespoons water
  • 1 tablespoon minced garlic
  • 1 tablespoon soy sauce
  • 2 teaspoons granulated keto sweetener
  • 8 cups thinly sliced kale packed
  • 1 cucumber peeled and sliced
  • 1/2 cup chopped smoked almonds
  • 1/2 cup optional golden raisins

Instructions
 

  • In a small bowl, you are going to want to combine your tahini, soybean oil, lemon juice, garlic, soy sauce, water, and sugar. Make sure you stir them together until smooth.
  • Now, in a large bowl, you are going to want to put in your cucumbers and kale. Pour the dressing you made in the smaller bowl over the kale and cucumbers.
  • Marinate the kale and cucumbers with the sauce for 20 minutes at the least. Be sure to toss the salad occasionally.
  • Sprinkle your almonds and golden raisins on top. Once that is done, you are ready to serve!
