Easy Bacon Cheeseburger Soup Recipe Ingredients
- 5 slices Bacon
- 12 oz. Ground Beef (80/20)
- 2 tbsp. Butter
- 3 cups Beef Broth
- 1/2 tsp. Garlic Powder
- 1/2 tsp. Onion Powder
- 2 tsp. Yellow Mustard
- 1/2 tsp. Black Pepper
- 1/2 tsp. Ground Red Pepper
- 1 tsp. Cumin
- 1 tsp. Chili Powder
- 2 1/2 tbsp. Tomato Paste
- 3 medium Dill Pickle, diced
- 1 cup Shredded Cheddar Cheese
- 3 oz. Cream Cheese
- 1/2 cup Heavy Cream
Easy Bacon Cheeseburger Soup Recipe Instructions:
Start by cooking your bacon. Once the bacon is done, remove it from the frying pan and start to cook the hamburger meat in the bacon grease left in the pan. (You can skip this step and add real bacon bits if you want a faster process)
In a separate pan, add the butter and all the spices. You will want to allow these spices to cook together for about 45 seconds. It will smell amazing!
Now, add the broth, tomato paste, cheese, mustard and cream cheese to the spices mixture. I let this cook on the stove top for about 5 minutes or so. Just enough for the cream cheese to be melted completely in the sauce.
Lastly, you will add your pickles and heavy cream to the sauce. It will be a nice and brown creamy texture.
Pour the sauce over the hamburger meat with bacon you cooked early and allow it to simmer for about 5 or 10 minutes.
Serve warm!

Note: This recipe was adapted from the Ruled Me Cheeseburger soup recipe. We used different variations in seasonings so it wouldn’t be spicy. My kids loved it!

Absolutely love this soup. I cooked up the bacon and then sauteed some onions and mushrooms in the bacon grease. Added all of this to the soup base with the hamburger. I wondered why there was no salt in the recipe, but decided to trust the recipe. It does not need any added salt. Thank you for this!

Really yummy recipe, printed out after our first bowl, this WILL be made again and again.
I used petite diced/drained tomato 1 can instead tomato paste.. think one could also exchange velveeta if chedder is a problem.

My husband are on the Keto diet. Just finished this soup. It is sooo good. The pickles give it the perfect taste. I will be making this again. It goes into my “go to” list.

Just finished eating this recipe and it was great! Even my picky husband loved it 🙂

Is the pickle essential for any reason? My daughter might eat this if I left it out. It’s a lot of work, having to make her a separate meal.
Jennifer says
The pickle helps make it taste like a cheeseburger. You can leave it out. We love it and usually add extra.
Sheila says
This is delicious! I was pleasantly surprised.
Elandra Williams says
Made this dish and adjusted my ingredients for more o a chili affect. It tastes oh! so good!!!!! This will definitely be a go-to dish.
Jessica says
Do you drain the grease after the beef is cooked or leave it in?
Erica says
Soooooo Good! The pickles make this soup!
Amber says
This soup is the bomb (late 90s ref). I loved every minute of it. I actually added onion, celery, and green pepper. I forgot the butter but I’m not sure you need it with the added fat from bacon and ground beef.
Honey says
Is this suppose to have 3 or 1 dill pickle? This post lists both ways. Also, when I put this recipe in MyFitnessPal it shows to have 8.9 net carbs.
Jennifer says
The recipe has one but I always add two more because the family loves more pickles.

I’m making this tonight and wondering if I can freeze portions. What do you think?
Tracy Raftus says
The flavours in this are Deeeeee-licious!!! And this is my first official keto meal!!! It’s getting chili outside and I was looking for a good soup, I highly recommend this one!! Thanks for the recipe, I’ll be making this one again!!

OM Goodness! This is A-MA-ZING! This will be a staple meal in my home this winter! Probably any season, for that matter! I don’t think I will ever tire of this awesome soup! Thank you so much for sharing!
Jess says
Oh. My. Gosh. This was DELICIOUS! My only complaint is that it makes so little (5 cups). As delicious as this is, less than a cup just isn’t going to do it. ha!
Recalculating in MFP for 5 servings brings it to 6 net carbs/cup. Glad I had some extra carbs this evening, because I certainly used them. This is going to the top of the “to make again ASAP” list! Thank you!
Kelli says
Made this tonight! The only change was using reduced sugar ketchup instead of tomato paste just because tomato paste was the only ingredient I didn’t have on hand. I will definitely be making this one again! Super yummy and filling! I may add onions and/or mushrooms next time!
Tera says
When served individually, you must add shredded lettuce, sounds weird but it makes a HUGE difference, like Game changer difference.
JoAnn says
This is what’s for dinner tonight while I’m home packing! I threw everything in the crock pot except the cream cheese, the cheddar cheese and the dill pickles. Those will be added in towards the end. Oh yeah, I also had some Italian sausage in the freezer, so I added it along with the ground beef. It was real hearty and delish!
Jen says
I just made this with chopped cauli and cooked onion. Oh wow. This was a fabulous soup. Hubby loved it to. It’s really hearty. I would omit the salt and possibly use low sodium broths.
Anna says
It was delicious! I would highly recommend!!!!
Bean says
This recipe is delicious! I would maybe reduce the salt a little, since all the other spices add so much nice flavor. I don’t, however, think this is 6 servings. I would say 4 at best.

I made this a couple of months ago and loved it. It seems like 2 tsp would be on the high side if the yellow mustard is supposed to be powder, so I used prepared mustard, but thought I’d check to be sure… Thanks!

*I meant to say *12oz* like the recipe states*

This soup is SUPER yummy. I love a keto recipe that doesn’t involve chopping veggies or dealing with cauliflower. This is a welcomed change in my kitchen. Thanks for sharing!!! TIP: At first, I cooked it with 10oz of ground beef like the recipes states, which means I had a hunk of leftover meat from the 1 lb. package. After the soup was complete, I felt like it needed that full pound of ground beef so next time I will use it all. I actually wouldn’t have minded MORE meat than that! Just a thought for those with big families to feed.
Deb says
Delicious! But I will omit the Kosher salt next time. Between the cheeses and bacon, it doesn’t need the salt.
Tammi says
This soup is delicious! I made a double batch and would like to know the serving size. One cup?
Thank you,
Tammi
Jennifer says
I just made a half recipe of this and really wish I had doubled the recipe instead. It is delicious, and perfect for my Keto diet. Thank you for this! I will be making it again soon.
