Keto Strawberry Pie

I absolutely love making this Keto Strawberry pie recipe when strawberries are in season!  We get some of the best strawberries here in Texas!

This free form keto pie crust recipe is a twist off of the original Fat Head Dough recipe but a tad bit lighter and sweeter.  We also have another version of a similar recipe we use for this Keto Hot Pocket Dough recipe too.  Except neither of those doughs is sweet.

In this recipe, my sweetener of choice is the Lakanto Confectioners Monkfruit sweetener.  It’s the perfect level of sweetness in the strawberry filling and the dough.

I also use True Lemon packets often.  I find the crystalized form of real lemon lasts way longer and it’s easier to keep in the pantry.  Every time I buy a box of True Lemon Packets it will last a very long time.

Keto Strawberry Pie Ingredients

Strawberry Filling

1/2 cup Lakanto Confectioners Monkfruit

1/2 teaspoon cinnamon

4 cups Strawberries (roughly 1 1/2 lbs)

1/2 teaspoon Xanthan Gum

2 packets True Lemon (or 1 teaspoon lemon juice)

Keto Pie Crust

2 cups Mozzarella cheese, shredded

5 tablespoons butter, melted

egg

1/2 cup almond flour

1/4 cup coconut flour

1 1/2 teaspoons baking powder

1 tablespoon Lakanto Confectioners Monkfruit

Keto Strawberry Pie Instructions

Start by preheating the oven to 350 degrees.

Cut the strawberries into quarters.

In a medium size bowl, add the strawberries, confectioners monkfruit, lemon, cinnamon, and Xanthan gum.  The moisture from the strawberries will create a paste around the strawberries.  If your strawberries are not juicy, you may need to add a tablespoon of water to the mixture.

Next, you will start working on the crust.  It will be important to measure out all the ingredients and have them all ready before you get started because once you melt the cheese for the crust it will be important to mix it together quickly.  The dough is easier to handle when it’s still warm.  If you get distracted and it takes you longer to make the dough it can become tough.  If this happens simply put the dough back in the microwave for 30 seconds.  The dough warmed is much easier to roll out.

Warm the mozzarella cheese for a minute to 90 seconds until it has fully melted.  It could take up to 2 minutes for your dough to melt.

Immediately add the butter to the dough mixture.  The heat from the cheese will quickly melt the butter and then cool the dough just enough for you to add the egg next.

Add the almond flour, coconut flour, baking powder, and sweetener.  Start to knead the dough until all the ingredients come together.  It will be sticky at first but the longer you knead it the more it will become a real dough.  If it has cooled too much and becomes stiff, you can heat it again during this process too.

Split the dough into two parts.

Roll out the dough into roughly 12-inch circles.  Be sure to roll the dough on a silicone baking mat with parchment paper on top or two sheets of parchment paper.

Take half the strawberry filling mixture and add it to the center of each rolled dough circle.

Fold the edges over just enough to create a border to hold the strawberry filling in.

Whip up one egg in a small bowl and whip the edges of the pie crust with this egg wash mixture.

Bake it on a flat baking sheet at 350 degrees for about 30 minutes or until the dough is golden brown.

The recipe will make two 7-inch free form Keto Strawberry pies!

Note:  these will not be too sweet.  If you prefer a really sweet pie then I would suggest adding 3/4 cup Monkfruit Confectioner’s sweetener in the strawberry filling.
