Boy, have I got a treat for YOU!  I just made some Keto Sushi Rolls with Smoked Salmon and Cucumber and the whole family loved them!

It’s been eight months since I started my Ketogenic journey and the one thing I found myself craving was going out for sushi with the family.  My oldest daughter just started on this Keto journey with us and she loves sushi.  I didn’t want her to get bored with the food choices so I attempted a low carb sushi roll made at home.  I don’t have trust in the restaurants yet and I don’t want to accidentally sabotage my success either.  It’s just easier for me to make Keto Sushi Rolls at home.  I’m so glad I did!

This recipe has been approved by the whole family.  You know how hard that is to get everyone on board?  This means this Keto Sushi Rolls with Smoked Salmon and Cucumber recipe is the bomb!  If fact, we already talked about adding it to our weekly menu rotation.  And…  my oldest even offered to make it!

 

Keto Sushi Rolls with Smoked Salmon and Cucumber Recipe Ingredients

  • Roasted Seaweed sheets
  • Cream Cheese (I used Chive and Onion)
  • 1 Large Cucumber
  • 2 – 3 oz packages of Smoked Salmon (ready to eat)
  • Optional:  Roasted Sesame seeds, Sriracha hot sauce, soy sauce or liquid aminos

And don’t forget to pair this with a good Keto Wine!!

 

Keto Sushi Rolls with Smoked Salmon and Cucumber Recipe Instructions

  1. Start by slicing your cucumber into small square strips.  These should be long enough to go over the whole seaweed sheet.Lay out one seaweed sheet and spreading a thin layer of cream cheese over the whole thing.
  2. Lay out one seaweed sheet and spreading a thin layer of cream cheese over the whole thing.
  3. Tear off pieces of the Smoked Salmon and add a line of fish that’s about 1 1/2 inches wide all the way across the sheet of salmon (as seen in the process photos below).
  4. Next to the smoked salmon, add about three strips of cucumber.
  5. Roll up the Keto Sushi Roll and slice into about 1-inch rolls.
  6. Lay the Keto Sushi rolls on a serving tray and top with any optional ingredients you want.  I chose the add Sriracha sauce with a small amount of roasted sesame seeds.  Yummy!
  7. This is an excellent way to hack your sushi rolls to make them low carb without much effort at all!
