Low Carb Meatball Casserole Recipe Ingredients
- 1 lb ground beef (I used 85/15 blend)
- 1 lb spicy pork sausage
- 1 cup shredded mozzarella
- 1/2 cup grated or shredded parmesan
- 1/2 cup crushed pork rinds (substitute for breading)
- 2 egg
- 2 tsp onion powder
- 2 tsp fresh minced garlic
- 1/2 teaspoon Italian Seasoning blend
- Low Carb Red Sauce (Spaghetti or Marinara)
- 2 Cups Cheese for the top of the casserole
- Fresh basil for a topping
This recipe makes between 25 and 30 meatballs depending on the size you make them.
One thing that we want to mention is the Rao’s Sauce seen here on Amazon is an excellent choice for no sugar added marinara sauce! This is our number one asked question for this recipe!
Low Carb Meatball Casserole Recipe Instructions
- Preheat oven to 400. Spray a casserole dish with cooking spray
- Use a food processor to crush the pork rinds.
- Combine all the ingredients (except for the red sauce 2 cups cheese and fresh basil that is set aside for the casserole) for the meatballs. I use my hands to mix all these ingredients.
- Use a small cookie scoop and make small meatballs (all the same size)
- Place the meatballs in a casserole dish and bake them for 15 to 20 minutes or until the meatballs are fully cooked.
- Remove them from the oven and drain the grease.
- Top with the low carb red sauce and cheese and put them back in the oven.
- Bake for an additional 5 to 10 minutes until the cheese has fully melted.
- Serve with a side salad or over zoodles and enjoy!

I used the whole jar of sauce. It didn’t say how to cover them, example 1 cup, use enough to cover each meatball etc. They smell great!

You make each meatball with one scoop.

The BEST tasting meatballs EVER!!! I’m glad I made a double recipe and froze the extra meatballs. I was able to quickly prepare dinner a few weeks later when we had it again. 3 meatballs are actually filling, especially when you add a side salad.

Have not made this yet but just wanted to comment that my hubby and I just discovered this Rao’s Marinara Spaghetti Sauce, and it is AWESOME!!! It is on the pricey side, but found it a Walmart and saved a little. It is pricey, but the flavor is so, so good and there is NO SUGAR added like all the other sauces! Love, Love, Love this sauce. Will be making this this week for sure.

The Silver Palate San Mariano marinara sauce is less expensive than Rao’s and does not contain sugar!
